Ahhh! I know, it’s been WAYYY too long since my last blog post…SORRY! Let me make it up to you by sharing with you one of my FAVORITE protein pancake recipes – GREEN BANANA CHEESECAKE PROTEIN PANCAKES! Yep, these babies are green in color but they taste like yummy banana and cheesecake! I love them! Let me warn you, this is a large meal – so you better have a large appetite!
Okay here’s how it’s done –
Minutes to Prepare: 5
Minutes to Cook: 15
Number of Servings: 1
3/4 cup All Whites Liquid Egg White
1/3 cup Fat-Free Cottage Cheese
1/2-1 cup Baby Spinach
1 T Stevia in the Raw
1/2 Banana, frozen – medium (7″ to 7-7/8″ long)
1 T Jello Sugar Free Fat Free Instant Cheesecake Pudding(mix only)
2 T Bob’s Red mill Coconut Flour
1 T “LouAna” Pure Coconut Oil
Bring a griddle to medium heat.
In a blender or food processor (I use the Magic Bullet) combine all ingredients and blend until you have a smooth batter.
If needed, spray your pan/griddle with light cooking spray and pour batter in the pan. Cook until the batter bubbles (about 2 min) then flip the pancake and cook for another minute or so. Repeat until the batter is gone!
If you try to flip the pancake but it falls apart, it’s not ready to flip.
I like to top mine with a little sugar free syrup or powdered peanut butter.
If you don’t have coconut flour you can use 1/4 cup dry oats (nutrition stats will change).
